If my assumption is right, this would not be about peppers, but what most Americans would think of as "salsa" which is spanish for sauce, but that's not the point..
I tend to prefer red over green if that is the case. Usually not quite as hot, but better in the fact that it doesn't overpower the flavor of what you put it on.
And for the record, pepper spray works very well.
