I've dissected a frog/toad. It had frog spawn in it. I felt almost professional. The amphibians we dealt with were edible and our Biology teacher had one skinned, gutted, boiled and cooked.
When I was in Biology, we dissected squid. The Anatomy class got to dissect cats. Which was awesome. They left them out, under plastic covers, and they had little sticks pointing out various organs and stuff, it was pretty cool.
It had an odd smell to it, though.
