And I'm preferably a big fan of Fluttershy and Big Mac(Macintosh the red guy pony) also known as Applejack's older brother. And I'm also a big fan of FlutterMac

And about the guy ponies not appearing them. There are some, you just got to look harder. Even Rarity mentions what her 'prince' would look like.

And not only that they have broader muzzles, the males are actually slightly taller than females.
